The most reliable way to determine the quality of an egg is with an egg mirror. This consists of a box A that is closed on all sides and in which a mirror D is attached to the upper wall at an angle of 45° . In the upper wall B there are circular holes into which the eggs are placed. The front wall of the box , facing the mirror , contains two eyepieces C in a frame similar to those used in theater glasses . All light must pass through the eggs , strikes the mirror , and is reflected into the eye of the observer, who can observe any cloudiness in the egg. With this instrument , one can test the freshness of many eggs at the same time
